Chopped Salad – With Local Hard Boiled Eggs, Avocado & Olives

I wanted to share this recipe partly because it showcases our eggs which have been hard boiled. Believe it or not, before we took on the Chicken farm, the owner told me you couldn’t hard boil them. I was really surprised. Then I realized he was right, but only sort of. If you try and hard boil fresh pastured eggs the traditional way – meaning store bought eggs which have been sitting around in transit and on market shelves for up to a month (!), then you won’t succeed. However there is a way! And for those of you who purchase eggs from us or someone else or have your own egg layers, here’s a great no fail way to hard boil them for a delicious healthy chopped salad.

Not only to farm fresh eggs hard boil – but when does this way the yolk retains all it’s glorious golden color without getting green edges or becoming chalky

For the hard boiled eggs:

  • start by filling a pot with water, about half way up
  • cover and bring to a boil
  • remove cover and add your eggs
  • boil for exactly 13 mintues
  • remove and run under cold water or plunge in an ice bath
  • enjoy the ease of peeling your farm fresh eggs!

For the chopped salad, combine all the following

  • chop, 1/2 red onion
  • 3-4 sprigs of celery with leaves
  • 6-7 cherry or grape tomatoes – cut into 4’s
  • 1/3 cup of kalamata olives – cut in 1/2
  • 1/4-1/2 large avocado – box cut
  • 4 hard boiled eggs – cut in 4’s

Combine in a large bowl and drizzle in olive oil, a splash or apple cider vinegar, a sprinkle of sea salt and black pepper. Enjoy!
