Kauai Fresh Lettuce – more than just salad!

fullsizerender_4Don’t toss your wilting salad mix! Wow, I will never get rid of wilting greens again. I had to question what to do with this massive bag of lettuce I acquired from Kauai Fresh Farms. I ate two days worth of salad, made sandwiches for the kids, bundled it up in wraps then peered at the bag of greens and still felt overwhelmed. There’s really only so much one can eat before lettuce loses its freshness, crispness and begins to wilt. Plus, to me, a few leaves of lettuce doesn’t scream NUTRITION…but a bowl of what was a 1/2 lb sure does. fullsizerender_3

Plus, doesn’t this just look delicious??  I’ll take a bowl of hot flavorful sautéed lettuce over a raw salad any (ok, most) days. Makes the perfect dinner – accompanied by whatever’s on hand, leftovers, steamed rice, toast etc. The only requirement is that you have a lot on hand bc it reduces down quite a bit.
Here’s what I did:
  • Chop 3 cloves of garlic and a large nub of ginger coarsley and set aside
  • Heat a skillet or heavy bottomed, wide rimmed pan, over high heat.
  • Add olive oil to coat the bottom of
  • Allow to heat up then add your lettuce in batches
  • Toss/stir gently (tongs are a good tool here)
  • Once the lettuce is mostly cooked through, add garlic and ginger and cook another minute
  • Sprinkle with sea salt and remove from pan
From start to finish this dish takes about 5 minutes.
Eat hot.
